Recipes: roasted cauliflower with tahini, carrot salads with raisins

WHAT'S IN YOUR BOX?

orange carrots - 1 bu

half pint cherry tomatoes for fulls - 1 ct (more tomatoes coming soon for all) bok choy - 1 ct

green kale - 1 bu

parsley - 1 bu

cabbage, green - 1 ct

#1 and #2 broccoli - 1 -2 ct

#1 and #2 cauliflower ~2/3 lb smalls, ~ 1 lb fulls ** Some of the cauliflower and broccoli are #2 grade, meaning, they have imperfections but we wanted to get another round of these crops to you before they are gone for a moment.

Upcoming Crops: dill, garlic, more cucumbers .... the first cherry tomatoes are coloring up, green house heirlooms and romas are putting on fruits, lots of other crops in the field are growing strong but are a few weeks out like celery, beets and blueberries.

Knee high well before the 4th of July! This was taken two weeks ago, now the plants in the first planting are as tall as a pony and silks are appearing. It takes a few weeks after the silks appear for sweet corn to be ready. We have two plantings each with two different varieties. The crop is healthy with the help of lacewings... a beneficial insect that eats pests like aphids and seed eating bugs. Lacewings are plentiful on the farm this year. These awesome insects arrive naturally on the farm and we inoculate the farm with lacewing eggs that are just hatching.

Oven Roasted Cauliflower with Tahini

What us farmers are eating this week for breakfast, mmm mmm. If you love tahini/sesame flavor, just keep it simple and spoon tahini on the cauliflower.

Cauliflower

  • 1 head cauliflower, cut into florets

  • 1 teaspoon salt, plus more to taste

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon black pepper

  • 2 tablespoons olive oil

For the Lemon Herb Tahini

  • 2 cloves garlic

  • 1 cup fresh herbs -- parsley or various herbs that total 1 cup like dill, chives, mint, and/or basil

  • 1 teaspoon salt, plus more to taste

  • 1/2 cup tahini

  • 1/4 cup lemon juice

  • 1/3 cup water, plus more to taste


Instructions

  • Add the cauliflower florets to large mixing bowl.

  • Drizzle with olive oil and then add the garlic powder, salt, and pepper.

  • Toss the cauliflower florets until well coated in the olive and seasonings then transfer them to a large baking sheet. Place the florets cut side down to help them get golden brown and crispy.

  • Roast the cauliflower at 425 degrees for around 25-30 minutes. Flip the florets 12-15 minutes into cooking.

  • While the cauliflower is roasting, add all of the tahini sauce ingredients to a food processor and blend until smooth and creamy. Feel free to add a few more tablespoons of water to the tahini sauce to thin it out a bit if you think it is too thick.

  • Once the cauliflower is golden brown and tender, but still has a little bite, remove it from the oven.

  • Transfer the roasted cauliflower to a serving dish or platter and serve with tahini sauce on the side. Enjoy!

    Carrot Salad with Raisins

    We all loved this salad over the weekend, inspired by Auntie Rachael and a whole lot of carrots!

    Salad

    • ½ cup raisins

    • 1 cup warm water (or leftover pineapple juice – just make sure it's warm)

    • 1 small can of pineapple tidbits, drained very well

    • 1 pound carrots

    • pinch of salt

    • 1 Tablespoon

    • 3 Tablespoons lemon juice

    • Pineapple juice if available, to taste

    • 1/4 cup chopped walnuts (optional)


    Instructions

    • Put raisins in a cup of very warm water so they plump back up. Once they plump up, drain water.

    • Peel carrots and then grate them

    • Mix lemon juice, salt and honey

    • In a medium bowl, toss grated carrots with lemon honey mix and pineapple juice is using

    • Then add in raisins and pineapple and nuts and stir until combined.

    • Taste-- add more honey lemon mix if desired

    • Cover and put in the fridge to chill thoroughly. Give it another good stir before serving.

ABOUT PICKING UP YOUR CSA

Bring your own bag. Pick up at your pick up location and day (Wednesday or Friday) from 12-6pm. If you ordered an add-on, it will be packed in a separate labeled tote. 

 

HOW TO PICK UP YOUR CSA

#1: Sign-in! the golden rule

Find & Sign-off your name on the sign-in sheet each week and please ONLY take the items listed next to your name.


This vital step helps ensure everyone goes home happy, including our site hosts and farmers, week after week.


#2: Locate your shares


Boxes are labeled as Small or Full. Summer Salad Lover Add-on shares are in a large tote labeled "Salad Add-ons"  


 #3: Unpack your tote & stack the empties  


Please bring your own reusable shopping bag to transport your items - we’ll pick the totes up next week for reuse! We can use them for multiple seasons, reducing waste one box at a time.


USING THE WEEKLY SWAP BOX? 

Swap boxes are green with flowers painted on them. Swap boxes are labeled and will stand out! If your pick up site has a swap box, please feel free to swap an item you may not want in your box with an item in the provided and specifically-labeled SWAP BOX. Please limit the swaps to one item for one item per week.

(Please do not supplement it with something else!) Contact the farm directly before taking something else. The sooner you reach out the sooner your item may be located.

(Please share all the details of how to pick up with them BEFORE they attempt to pick up -- BYO bag, take from the right size box, check off the right name). Friends and family picking up for others is the number one cause of pickup mistakes, and we thank you in advance for your consideration.

VACATIONS

Every CSA member can put their share on hold in trade for a $20 credit per week, up to two. Login to your account and select your vacation dates or email us. Please request your vacation at least three days in advance to receive the credit.



REDEEMING YOUR VACATION CREDIT

Go to our Online Store to see availability for add-ons this week and to double check the value of your credit. You'll need to login to see your credit amount. In the 2025 season you can use your vacation credits to purchase add-ons electronically or apply the credit to a Fall Share. But as always you can also just email the farm. Thanks!
